Seared Lemon Chicken

I had the most incredible chicken this week! It is a simple recipe but the way it is cooked is delicious! The recipe is for 1 person.

1 large lemon
4 oz raw chicken
Sea salt
1 Tbs olive oil

Trim all fat from chicken. Cut raw chicken into 1 inch cubes. Marinate in juice from 1/2 freshly squeezed lemon for 20 min. Drain juice of chicken and discard.

Warm frying pan on stove top with 1 Tbs of olive oil on medium high to high heat and add chicken (careful of splashing oil) sear chicken until it turns light brown and then turn to medium low heat this will lock in the juices for the remainder of cooking. Add juice from other 1/2 lemon on the cooking chicken and continually flip cubes until cooked through and lemon juice is gone. Add a light sprinkle of sea salt. Serve in tacos or just by itself.

This is delicious. The lemon juice tenderizes the chicken and the cubes provide more surface area which allows for more flavor to enter the chicken.
